Ingredients
  

Dry Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 2 large eggs

Method
 

  1. Preheat oven to 400°F (200°C) and grease an 8-inch square baking pan.
  2. In a bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk sour cream, milk, melted butter, and eggs until smooth.
  4. Combine the wet and dry ingredients, stir until just mixed (don’t overmix!).
  5. Pour the batter into the greased pan and spread evenly.
  6. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  7. Let cool for a few minutes before slicing into squares. Enjoy!

Notes

For extra flavor, add shredded cheddar cheese, sweet corn kernels, or chopped jalapeños to the batter before baking. 🌽🔥
