Ingredients
  

Filling
  • 2 Hashbrown sticks
  • 1 Chicken sausage sliced
  • 2 eggs beaten
  • 1 tbsp onion diced
  • 1 tbsp bell pepper diced
  • 1/4 tsp garlic powder
  • Salt & pepper to taste
Assembly
  • 2-3 slices cheddar cheese
  • 1 large flour tortilla
  • chipotle mayo or spicy mayo
  • pickled jalapeños optional

Method
 

  1. Cook hashbrown sticks according to package instructions until crispy. Set aside.
  2. In a skillet, sauté onions and bell peppers until softened. Add chicken sausage and cook until browned.
  3. Pour in the beaten eggs, season with garlic powder, salt, and pepper. Scramble until eggs are fully cooked.
  4. Warm the tortilla. Spread chipotle mayo in the center. Layer hashbrowns, egg mixture, cheddar cheese, and pickled jalapeños (if using).
  5. Wrap the burrito tightly. Optionally, toast the burrito in the skillet for a golden, crispy finish. Enjoy immediately!
